They died in what is known as a Pyroclastic flow. This a fast moving cloud of ash and debris and super hot gasses. They can reach speed of up to 300 miles an hour and are almost impossible to escape. When Vesuvius erupted this Cloud was released and raced down the mountain to the town basically flash burning every thing in its path. That's why you can see people huddled on floors holding children etc etched in stone.
