In order to make a good Japanese Sushi Rice, you need vinegar, sugar and salt. Mixing salt with sugar and adding in vinegar will make the sugar dissolve and give a good flavoring to the sushi rice.
Sugar dissolves in vinegar because vinegar contains acids and is partially made out of water. Vinegar also dissolves the sugar (the solute) because it is the solvent. Since the vinegar contains acids, it dissolves the sugar faster too. When the sugar cannot dissolve anymore it reaches its saturation point. Hope this helped !
