A saddle hunter is horse that can carry a large amount of weight over distance. Generally not a 'pretty' horse like a arabian or a fine boned tb. A hack, definition wise, tends to vary. But sometime is referred to a horse who is used for normal riding or a horse who is well trained, calm and 'easy'. To 'hack' can also be to have a short ride. Some equestrians believe it means to do a trail ride but a hack doesn't have to leave the arena. It is just a short, easy ride.
Hunter is a catch-all for any riding in a hunt or close contact saddle. Hunter Under Saddle is usually a flat class which is judged on how a horse moves on flat ground as if on a real fox hunt. The ideal is a free moving shoulder that swings out a flat knee while the back end powers the horse with his hocks engaged.
Actually, hunters and jumpers are completely different things - hunters is based on form and style, while jumpers is based on speed and height. Huntseat is about form and style, too.
