The most common is a French baguette, fried seafood (oysters, shrimp, crawfish, soft shell crab, etc), mayonnaise(I prefer remoulade sauce), lettuce, tomato, and optional pickles. There are also po-boys with roast beef and gravy, sausage, ham and cheese, or even french fry and gravy varieties. Some places in New Orleans even use cabbage or coleslaw instead of lettuce, but most people outside New Orleans use the term "po-boy" for any fried seafood sub.
