Hydrolysis is the use of a water molecule to split something. It shouldn't be confused with the electrolysis of water, the breaking down of a water molecule to hydrogen and oxygen in the presence of an electric current.

Hydrolysis of:

  1. peptide bond (between two amino acids, as in proteins)

    R-C-NH--C(=O)-R + H-OH --> R-C-NH-H + HO-C(=O)-R

  2. ester bond (between acid and alcohol, as in lipids)

    R-C-O--C(=O)-R + H-OH --> -C-OH + HO-C(=O)-R

  3. glycosidic bond (between two glycosides, as in disaccharides like cane/milk/malt sugar)

    R-O-C--O-C-R + HO-H --> R-O-C-OH + H-O-C-R

Legend:

  • the hydrolyzed bond is marked as '--'
  • R- can be either one or more H- or C-atoms bond to the C atom presented
  • H-OH is the hydrolysing water molecule. The hydrolysis is almost always catalysed by acid.
