The level of moisture inside the peanut is the basic difference between green & raw peanuts. rubbed thyme is rubbed down to a powder. dried thyme is the leaves dried out, without it being rubbed down to a powder.

I would guess that the difference would be that a sun blushed tomato (though I have never heard of it) would be a little less baked by the sun than a sun dried tomato.
