Overall, NSW are called "The Blues" in every sport, and in cricket it is used as their official name; as is the nickname, "Bluebaggers". Traditionally the NSW State flower is the Waratah, but generally only their Rugby union team uses the name, "The Waratahs." In State-of-Origin rugby league they are called the "Cockroaches," which was originally derogatory, but now is used affectionately; though they generally use "The Blues" as as in every other sport.

Australians could be called Aussies, because that is a short form of the name. Sometimes, Australia is called OZ because of this term. I haven't heard anyone call Australians "ozzies" however. To be polite, you should call Australians Australians, not Aussies.
