amplitude measures the highest and lowest points in a wave from a fixed position e.g. if a wave has a constant height value of +10 and -10, and the fixed position is 0, then the amplitude would be +10 or -10. additional information, frequency measures the time taken for a wave to make one single oscillation, going from +10, through 0, through -10, back through 0 to the start point of +10.

It's the height (magnitude) of the wave from max to min.

Amplitude is the magnitude of change in the oscillating variable, with each oscillation, within an oscillating system. Sound waves are oscillations in atmospheric pressure and their amplitudes are proportional to the change in pressure during one oscillation (the distance between the waves crest and trough).
