It's called dipole interaction. A dipole is a polar molecule, or one with a positive end and a negative end (due to different numbers of unpaired electrons.) When a bunch of dipoles get together, the whole "opposites attract" thing happens, and the positive end of one molecules says "how ya doin'" to the negative end of another molecule. Multiplied over billions and billions of times, and it becomes a measurable force within a substance which can explain certain physical properties of that substance.
