One nice thing about casserole dishes is that they can unite some wonderful flavors into a delicious and convenient package. Our ham and egg breakfast casserole is no exception. We've combined ham, cheese, eggs and hash browns into a breakfast entre that's fast and easy to prepare in a single pan. Summer or winter, this dish is a big winner with kids and adults alike.
Ham and Egg Breakfast Casserole Recipe
Ingredients
16-ounce bag hash brown potatoes, thawed 1-1/2 cups diced ham 1-1/2 cups sharp cheddar cheese, shredded 8 eggs 1-2/3 cups whole milk Fresh chives, optional
Directions
Bring hash brown potatoes to room temperature on your countertop. This should take about an hour. (You can also defrost them in your microwave using the manufacturer's recommended settings.) Add cooking spray to a 13" x 9" pan and set aside. In a large bowl, combine potatoes, ham and cheese. Toss to incorporate. In a separate medium sized bowl, beat or whisk eggs and milk for 60 seconds. Pour egg mixture over potatoes and stir. Add mixture to the prepared baking dish and cover with aluminum foil. Bake in the center rack of a 350 degree Fahrenheit oven for 60 minutes or until the eggs set. Cool for 5 minutes. Sprinkle chopped chives on the top of the casserole before serving. (You can also substitute fresh parsley.)

Special note: This recipe tastes great the second day. As a tasty variation, chop any leftovers into chunks and use as a filling for breakfast burritos.
Other Variations: Add 1/4 cup of sliced mushrooms to the potato, ham and cheese mixture before baking.
Top the finished casserole with 1/2 cup of cheddar cheese, 1/2 cup of salsa and 2 tablespoons chopped, fresh cilantro.
