That is a very subjective question, but with that in mind, here are some of my favorites. Ecconote for recording messages or notes, Bloomberg for the stock market, NY times for news. Where for restaurants, gas prices etc etc based upon your location.If your fly American, the mobile app is very helpful. Yelp is also good for restaurant reviews etc. Most of these are free or a low cost. The calculator 12 is based on the HP 12 and is not cheap and does not do all the functions, but works well. If you are a Bank America customer, their free app allows banking functions, but a great feature is showing nearest ATM based upon your location. Great for traveling.
I can suggest my list of favorites but at the end of the day it will be useless for you, to answer this question for yourself you need to check the iTunes App Store, browse categories and decide what functions you would like your iPhone to have. It depends on your activities in life but having more than 285,000 apps it's clear that you have a great choice to choose from :-)
