Roasting red potatoes works just as well as roasting any other type of potato.
You can make oven roasted potatoes with brown or red potatoes. The red ones have a smoother texture, but the others will certainly be edible!

Start by removing the potato skin and cut the potatoes into ¼ inch slices. Add a tsp of oil in the pan. Once the oil is hot you can put the potatoes in the frying pan or else you may get greasy fries if the oil is not sufficiently heated. You need to keep cooking the potatoes until they turn brownish i color. When it's done, put the fries in a paper towel. Allow the juices and oil to drain out. Put the fries on a serving plate. Sprinkle some salt or pepper if you wish and then start serving. These are Fried Potatoes.
Red potatoes are the perfect side to almost any dish. I do not usually make things, such as mash potato, from red potatoes, however roasting them with garlic and serving with a meat dish is a great way to enjoy them.

Most Chefs and home cooks recommend Russet potatoes for mashing, as they give the best flavor and texture. However, most any potatoes may be used. I have had delicious Alaskan Golden mashed potatoes, as well as new Red potatoes. But my favorite is still the Russet. Note: Potatoes called 'baking potatoes,' do not usually cook down to a soft texture, and therefore are not as nice to use as other potatoes.
