Although I am not entirely sure what EXACTLY it is that we call the uncle (the title "guardian" would do just fine, unless there are laws in your country which state that a person could only be referred to as a guardian after going through a legal process), we definitely DO NOT call the child a "foster child"- unless there's a court order (like I've said), in which case, the uncle is no longer just the legal guardian, but a (surrogate) parent.
