Not a huge amount unless you are planning on running the machine on a domain (office network) or run stuff in Win XP mode. In short, the features included in pro that aren't included in home are Domain connectivity and Windows XP mode (virtual machine which will also require virtualization enabled CPU). Ultimate also adds "Bit Locker" which is simply file encryption and you can also change between 35 languages on the fly whereas other versions are single language.
THere is no such OS called windows premium., but in vista there are many flavours called vista basic, home premium and vista ultimate. In these variations the higher you go the more extra features u get and obviously the more you pay for it. LIke vista basic does have windows aero and home premium does not have dream scenes, bit locker etc which ultimate has., but the basic OS is the same. :)
All the features of Home Premium are included in Ultimate. There is no reason to go backwards.
Windows 7 Home Premium is one of the newest software. But it is not the best. Windows 7 Ultimate is currently the best software. You can access more things with Windows 7 Ultimate than Windows 7 Home Premium.
