A series is the run of all of the episodes in totality for any television program (e.g. M*A*S*H, Cheers, Lost, Supernatural, etc).

A variety show is a type of series that is loosely based on vaudeville (or what they in the UK and Ireland called "The Gaiety") with singing, dancing, and comedy sketches (e.g. The Sonny & Cher Show, The Judy Garland Show, The Wayne Brady Show) providing a "variety" of different entertainment on the same episode.

A soap opera (Also called a daytime-drama) is a daily melodramatic serialized drama that airs during the late morning or early afternoon. Serialized means that the storylines aren't contained and resolved within one episode, but continue on for weeks, months and even years without resolution. Unlike variety shows there is rarely any singing or dancing, and there is no sketch comedy component. These shows have very large casts and usually incorporate sensational storylines that are considered too fantastical for primetime television. Unlike other daytime programs, Soap Operas operate under a slightly different set of rules by the FCC, allowing them to be more racy (have more sexual content) than other programs on during the daytime hours when children can watch. These shows started out as radio series before television and women used to listen to them while cleaning the house (hence the name "Soap opera." Starting in the 1970's a new nighttime version of the soap opera with better production values started to be come popular with shows like Dallas, Knots Landing, Falcon Crest and Dynasty. They fell out of fashion for a while in the 1990s, but were revived in the last decade with ABC's Desperate Housewives and current shows like Scandal and Revenge.

In the UK, what they call a "series" is known in the US as a season of television, or one year's accumulated episodes. The UK also have soap operas, which they simply call "serials" (because of the serialize stories), but their most popular serials air in the evening, not during the daytime.
