A Sonnet is written following a certain metrical line on its verses (mostly iambic pentameter) and that it also follows a certain rhyming scheme too which is very different from a prose which has no rigid structure and no rhythm and it even goes without the presence of any rhyming couplets.

English sonnets (Shakesperian) often only goes as far as 14 lines with either the presence of a heroic rhyming couplet in the end or a different variation. While the Italian form of sonnet follows a similar pattern but goes up to 16 lines and has 4 couplets in the end that rhymes in this manner (abab or petrarchan rhyming scheme).

Prose on the other hand can be compared to an essay.... no structure, no rhyming scheme, and no metrical pattern and no rhythm.

I know its a lenghty explanation but that is the technical answer to it...
