Processing white flour removes 26 nutrients including vitamins, essential oils, protein and fiber. Most white flour is also bleached which adds harmful chemicals to it. White flour stores better because there are not enough nutrients in it to sustain bugs and rodents, who do appreciate the nutritional value of whole grain flour!

White flour usually does rise a bit more than wholemeal because it has had the heavy solid content bran taken out in other words it's finer. It also depends on how much air has been sifted into it at the preparation stage. But it does also depend on how strong the wheat flour is with regard to Gluten.

The strong bread making flours contain more gluten and they are therefore more elastic both as dough and when cooked.

So if you want a Yorkshire Pudding to rise well, use Strong White Bread making flour.

If you try making Yorkshire Pudding with wholemeal or wheatmeal flour it won't rise nearly as much. The end product will be heavy and more doughy. You can force it rise a bit more by adding an extra egg but usually type for type, the white will rise more than the brown.

yes strong white flower is used for tall cakes like wedding cakes and idian cakes. Unlike plain/self rasing flower is used for ordianary cakes like sponge,birthday ; others so thats the difference
