A vegetable spread contains a higher water content, thus making it softer when at cooler temperatures. Margarine contains less water and is a better purchase, unless you like "watered down" margarine. Also when the spread type varieties melts, a good portion of that water will separate out. That's why when you put it back in the fridge you find water in with your margarine. Margarine will not separate lie that, at least not as much or as easily.

Butter is made from milk fat, while margarine is made from plant fat. They also differ slightly in taste. Butter will have more of a fresh taste to it and a distinct but pleasant aftertaste. Margarine might have more flavor initially, but might not be as filling. For years, doctors have claimed margarine is better for you, but a lot of margarines have trans fats which are likely more unhealthy than the saturated fat found in real butter.

Butter is made from an animal source which means it is worse for your heart and in particular you arteries. Margarine is made from a plant source which means it has less saturated fat.
