The product of glycolysis is pyruvate. In alcoholic (ethanol) fermentation, pyruvate is converted into ethanol and carbon dioxide. The first step is decarboxylation, catalyzed by pyruvate decarboxylase:

CH3COCOO- --> CH3CHO

pyruvate --> acetaldehyde

Then acetaldehyde is reduced to ethanol; this step is catalyzed by alcohol dehydrogenase and involves the oxidation of NADH+ + H+ to NADH:

CH3CHO --> CH3CH2OH
