Because otherwise you will get inaccurate results. But it is best before you start to work out how accurately you need each value you are going to measure. For example if you are going to measure three variables, and they all have a similar effect on the result, it is no use measuring two very accurately if the other one can't be measured to the same accuracy. This is the principle of combining errors, each measured quantity should have a similar percentage error ideally. You might purchase some very expensive equipment to measure one thing, but it would be a waste if other things are not measured to the same accuracy, so take a bit of time to think this out before you start.

I'm guessing you mean an accurate log. Since the very idea of science is to establish facts and research various areas, to prove that these results are correct they must be replicable. Since this is very difficult to do without knowing exactly how the initial experiment was conducted, an accurate record is required.
They need to keep track of their work to share to the public, or just so they don't preform the experiments again.

If scientific data is not recorded accurately, then the analysis of that data will lead to inaccurate conclusions. Inaccurate conclusions will do nothing to advance science, but will waste people's time.

i would say fall. only because of the nature changing leaves. over time, you may not notice but all of a sudden you see branches,no leaves. great experiment!

It is good to keep notes because if they are going to redo the same experiment they could follow the steps or see if they did it right if they did not they could see what they did wrong.
