The hat is actually a type of cowboy hat called a "Boss of the Plains" worn in the traditional manner (flat brim open crown). This is because the Undertaker's original character was modeled after an old western mortician.

The ring Brendon always wears was giving to him by a fan in Australia. It is engraved with his name. It has no significant meaning (such as a promise ring, etc), but it is a very nice ring that reminds him of a fan so it's sweet that he wears it.
