as a wife and mother for some 35+ years, i believe food accompaniments originated long ago when mouths were plentiful but the main courses may not have been abundant. i believe the old grannies knew that you needed more than just meat, to maintain your health. just a couple of generations ago, preserves accompanied everyone's mealtime to provide vegetables and fruits, especially out of season. think settlers in Canada's cold winter; 7 or 12 kids, maybe a neighbour or 2, and one ham to feed all. cook potatoes, of course, maybe a turnip or shredded, cooked cabbage to flesh out the potatoes, serve some preserved relishes or chutneys, pickled cukes, beets, garlic, whatever you have. everyone takes a bit of everything and everyone gets to eat. dessert, of course, begs you to not overeat and leave room in your tummy for cake, [ - remember the 'wartime' cakes without essentials in the recipe?], preserved berries or the now snubbed fruitcake - there were no bananas etc fresh fruit!!! that's what my experience in the kitchen leads me to believe, anyway.
