The most proper method for thawing meats is to put it in the refrigerator for just enough time in advance to have it thawed when you need to use it. There are other quick-thaw methods - like using the microwave or a cold water bath - but they require careful monitoring and immediate cooking upon completion of the thaw. None of the proper methods include leaving it out on the counter.

The most easiest way to do it is to leave it out overnight and when you wake up in the morning it is totally thawed out. And it is completely safe. All you have to do is remember to put it out overnight before you go to bed

Would it be a problem if a chilled meet become forzen during transit?

Once a meat has become frozen you should not allow it to defrost and then attempt to refreeze it. If you allow it to defrost and then use it by its use by date then that is OK. You can however refreeze it once cooked for example if you buy some fresh mince it becomes frozen in transit, you then defrost it and make a shepherds pie you can then freeze it and defrost it at a later date when ready to eat. If you meant to chill the meat but it just got a little too cold just defrost it before using.

What is the best ways to defrost meat?

The safest way to defrost meat is to allow it to thaw in the refrigerator. This takes a long time, usually over night, but it keeps the meat the meat at a safe temperature and prevents bacteria growth. This is the best way to thaw meat that will be eaten raw or undercooked. Another safe method is to place the wrapped meat in a bowl in the sink and keep continuous cold water running over it. You'll need to flip the meat several times for even thawing. Thawing meat in the microwave is another option, but only if the meat is going to be thoroughly cooked.

What are the three best ways to defrost meat or poultry?

There are three convenient ways to defrost frozen meat, in the refrigerator, in moving water, or in the microwave. The best (from the safety point of view) is in the refrigerator. But size is important as well. If you have a small hamburger patty the microwave can work well, but the microwave has a tendency to cook outer portions of meat before the inner portions are defrosted. A pound of ground round (hamburger meat) can be defrosted in the microwave if you use the defrost setting and remove defrosted meat as you go. And then cook immediately. Defrosting in water is reasonable if you can put your frozen food in a waterproof plastic bag with the air pressed out and place it in a pot and keep a stream of cold water running through the pot. You have to watch this process and don't let defrosted meat linger in the pot. Make use of your defrosted meat immediately. If you have the time or your defrosting job is larger than a pound, refrigerator defrosting is the safest and easiest; just plan ahead.

Can you cook sardines from frozen?

Don't see why not. Word of warning though - cooking anything straight from frozen gives worse results than if you defrost it then cook it. Especially noticeable with fresh meat.
