If you use shortening in cupcake sit keeps them very moist. For those who do not like shortening, you do not taste it. It tastes pretty much the same but is more moist and melt in your mouth like.

What is the purpose of fats in cupcakes?

Fats in cupcakes serve the same purpose as they do in cakes. The fats in cupcakes give them moistness, flavor and a better texture. Without fats, they would be very dry and unappealing to eat. There are several different types of fats that can be used in them, and most recipes do allow for substitution of one type of fat for another. Some of the fats that are used in cupcakes and cakes are shortening, butter, margarine and vegetable oil. You can also use olive oil and coconut oil in many recipes for baked goods.

What is alike between the muffin and the cupcake?

Muffins are a lot bigger than cupcakes and on cupcakes the icing seems to be hard and smooth! :)More information:The distinction between American style muffins and cupcakes can be hazy. The product called "muffins" in the U.S. might be called "tea cakes" in Great Britain. Technically, muffins are made with the same batter as quick breads with as little as 2 Tbs. sugar, while cupcakes are made with the batter used to make cake, with a full cup of sugar for a similar quantity. Also, muffins are NOT topped with frosting or icing, whereas cupcakes usually are.
