A plot twist is a change in the expected direction or outcome of the plot of afilm, television series, video game, novel, comic or other fictional work. It is a common practice in narration used to keep the interest of an audience, usually surprising them with a revelation. Some "twists" are foreshadowed and can thus be predicted by many viewers/readers, whereas others are a complete shock.
An example of a plot twist is when it is revealed that a character believed to be dead is actually alive and has been working Behind the Scenes the entire time to manipulate the events of the story. This revelation changes the audience's understanding of the story and can create new conflicts and dynamics.
A twist ending or surprise ending is something unexpected. Everything is leading up to one thing, but suddenly things change and it goes in another direction. An example would be a romance where you expect two characters to get married, but in the end they each marry the other's best friend instead.
