Water evaporates from heat or pressure and turns into water vapor.
You have air getting into the water somewhere, go down and make sure every hose and fitting is tight.
There is not a specific trick that turns water to ice in 5 seconds. The temperature around the water and ice is what determines how fast the water will freeze.
The air pressure surrounding the bladder forces the water out . When pressure decreases to a fixed point, the pump turns on and raises the amount of water and pressure.
the point at which a liquid turns into a gas depends on the atmospheric pressure and the liquid water turns to gas at 100 degrees C at 1atm of pressure

The smaller the pipe and the more turns, the more resistance to the flow of water.
There are many different ways to use a 'water pressure pump' . Any water pump will build up pressure, this is the basic principle of well pumps, and similar. Most are 'used' by a pressure switch which turns the pump on when pressure decreases to a certain point.
A large DECREASE in the surface pressure will result in water turning to water vapor at room temperature.

100 degrees Celsius then it turns to gas -Provided that the pressure is normal atmospheric pressure(1 Atmosphere).
