I would not recommend saying you are sensitive during a job interview. I would research the company and try to say something that applies to the job description. In job interviews the employer is typically looking for someone they can relate to and work easily with. Saying you are sensitive, though it is not necessarily a bad characteristic, might make you appear to be difficult to work with.
Honesty is always a good answer in a job interview. In regards the answering you weakest areas take a negative and put a positive response to it. For example, an area of weakness might be time management, so you say I can get so involved in a project that I lose track of time.
