One food dish that is typical in Slovakia is stuffed cabbage. In Slovak, it is called plnená kapusta. This dish is actually common mainly in the eastern part of the country. The dishes common in the rest are baked chicken with rice, various kinds of schnitzel (breaded steak), and goulash stews served with a steamed dumpling called knedľa. Also, the "national dish" of the country are potato dumplings topped with a special sheep cheese called bryndza. Other specialties are plum dumplings - plums covered in dough, cooked and served topped with melted butter and ground poppy seeds, soups, and all kinds of sweets.
For the most part, the dishes of Slovenia are fairly simple. They use items available fresh, throughout the country. This includes seasoning dishes with fresh herbs, such as mint, sage, cinnamon, bay leaves, marjoram, thyme, and pepper. Although the dishes are relatively simple, they are often quite heavy, and have a high calorie content. You can get fresh crab from on of their main rivers, you can have ham that has been dried by the coastal winds (known as prsut). It is often eaten with cheese and figs, accompanied with locally made red wine. Polenta and Buckwheat Flour is often made into a porridge or used as a dessert, topped with honey and milk.
Aside from turnips and cabbage, there are rarely any other vegetables regularly used. They typically stick to starchy foods, like potatoes and beans. They cook with lard and animal drippings (such as bacon grease) and utilize a lot of eggs and cream in dishes, as well. They typically thicken dishes with flour, adding to the heaviness. Most of their soups contain meat, but their most common soup is made from turnip peels. Pork, Chicken, Veal and Lamb are the widest used meats, but they to utilize beef, goose, turkey, and duck. Dried Stockfish is a commonly eaten dish, and at Christmas, they eat deep fried Soca Trout. Most of the desserts in the area are made with doughs...such as pastries, phyllo-dough, and even donut like sweets. Most restaurants there specialize in local, traditional dishes.
