It's not just one substance or we'd probably call that substance "cell" or cells would be called whatever that substance is. There are a variety of molecules that make up cells.

The most common categories are proteins, sugars/starches, and lipids. Each of these is made up of various combination of elements and molecules but it gets really complicated fast when you get into molecular structure level.

Plant cells can have cell walls, mitochondria, chloroplasts, nuclei, nucleoli, large central vacuoles, Golgi complexes, vesicles, ribosomes, and/or endoplasmic reticulums. They both have cytoplasm.
