It's difficult to work out. It may have come from pretiolas - little rewards - from Southern France. Other suggestions is that is come from the German brezel, a bracelet.
It's because I actually found the answer on this website! Today, ( 4/2/10) it explained the origin of the pretzel! Creepy, huh? Well, legend says that a monk had some scraps of dough, and twisted it to make it look like arems crossing, praying. He baked them, and gave them to children who completed their prayers.
The shape in part, but now there are pretzels that aren't formed into a knot like the originals. Now I would say it's the flavor and the crunch salt that makes them a pretzel.

Right after you twist the pretzels into shape you usually spread an egg glaze on the pretzels. Since they are moist, the salt sticks to them. When you take them out of the oven, you will see that the salt has actually baked into the pretzel.
