It sounds like your engine is "dieseling". It's where a gasoline engine runs after any normal source of ignition is removed. Dieseling is often caused by carbon build up in the cylinder (on the head). After the engine has been run, the carbon stays red hot and continues to ignite the fuel.
It is normal if other lights come on at the same time. All of the reminder/warning lights should come on when ignition is in idle (key's in ignition, but the car is not running)
As long as it returns to the normal range when the engine is running, it's no big deal. Some gauges will read zero when the ignition is on, but the car isn't running... and some will max out. (like yours I'm guessing)

It is not normal because that is a common ignition failure. This is can be caused by a broken lock pin in cylinder assembly.

starts normal when its cold then after driving bout 10 miles it starts stumbling or hiccups feels like im running out of gas and then my RPM goes up to 3000RPM up and down

It can be normal for a person to get wet, or perspire while running. It is normal for someone to also sweat more than someone else while doing the same activity.
Normal operating Temp is about 87C
