Fossils are formed when something organic - a corpse, organic waste, plant matter, etc. - falls into soft mud and is covered before it has a chance to decave over-much. Over time, the organic bits rot away and leave a hollow space which is then filled with sediments that harden with the soil around them and become encased in rock. Some fossils are so well-preserved that you can see the imprints of scales or even feathers in the rock around the bones it is embedded in, even though they have long since decayed.
