There are very few inventions that helped the Europeans out at sea because most of the inventions that helped them out at sea were made by inventors who had actually been out to sea. Most inventors preferred to stay on land, so they made inventions to help people with problems on land not out at sea.

You don't say at what time of history. But assuming you mean the 15th and 16th century, a very important innovation was the development of the ship type called the Caravel, the first type of ship especially designed for open ocean travel. It finally enabled explorers to stop 'hugging' the shores and cross the Atlantic on the way to what turned out to be America and the Indian ocean on the way to the East Indies.
