First, run as fast as you can for the nearest barrier - a truck, a tree, a fence, whatever. Once a cow decides to actually charge you, it means business and will attack until you are perceived to no longer be a threat.
If the nearest barrier is too far to make it before the cow catches up to you (they can gallop faster than most humans can run), run in zig-zags, changing direction every 50 yards or so. Cows are faster, but they have a harder time changing direction and maintaining speed.
Third, learn from your mistake - cows typically don't charge without a reason. Make sure you don't come between a cow and her calf, don't tease or irritate the cows and don't back them into a corner and frighten them.
