Honey bees don't go dormant. But they become chilled, and shut down, if their body temperature drops below 7.5 degrees C/45.5 degrees F. They don't like their hives to fall below 13 degrees C/55.4 degrees F.

It is surprisingly warm in a bee hive. The bees keep the brood (eggs and larvae) at around 96oF (36oC), generating heat as necessary by vibrating their flight muscles. The immediate honey stores are around the brood, so will be at pretty much that temperature.

The longer term stores of honey will be further away from the brood and probably not quite as warm.
