A 1951 Olds transmission is a 'Hydramatic', and should use Dexron/Mercon, but some people like to use Type F (they say it shifts better). A good replacement for both these types would be B&M's Trickshift. That stuff works great!

At the master cylinder which may be under the drivers floor under a panel. If you do not see it, follow the brake lines. They will lead you to the master cylinder.

1951 was the first year Ford/Mercury offered an automatic transmission. They are called "ford-O-Matic" or "Merc-O-Matic". They are relatively rare. The alternative is using a late-model Ford C-4 trans or a Turbo 350, with an adapter kit. These kits are available from "Flat-o" and transmission adapters dot com. and probably more sources.
