As far as I know, it was just the usual ancient Greek rituals, involving the slaughter of cattle and possibly sheep. I don't know if there were any specific sacrifices involved.

The festivals and rituals were part of the religious beliefs of the ancient Romans. If some god/goddess were credited with a favor or a benefit to the city, they were honored with a festival and certain rituals whose purpose was to insure the god's continuing favor.
To the best of my knowledge the Hindus and the Catholic Church have nothing whatsoever in common in the way of religious rituals or ceremonies. The Catholic Church's rituals and ceremonies are rooted in the ancient Hebrew religion, not in the East.
