As with any guitar company, the woods used by the Gibson guitar company vary from instrument to instrument. Generally speaking, though, Gibsons tend to have mahogany bodies and necks complimented with rosewood fretboards. On most electric Guitars, a maple top is attached to the mahogany body to brighten the guitar's tone and add to the visual appeal of the instrument.

But let's take for example the Gibson Les Paul Standard Traditional: the body's made from a special non-chambered weight-relieved Mahogany, the top wood is plain Maple, the neck is also Mahogany and the fretboard is Rosewood. That's about it... if you intend to buy one, study lots of them first and then pick the one that suits your needs the most.

In theory, you could use any solid material. Metal, iron, wood, plastic. But wood resonates, and that's why guitars are (normally) made out of it.
