Actually, while ethanol is the chief alcohol in alcoholic beverages, other alcohols such as propanol and methanol are bi-products of fermentation and occur in small amounts of both wine and beer. Fermenting at a high temperature, with a high initial gravity, with fruit, or with an insufficient amount of yeast all increase the risk of producing higher, or fusel, alcohols.
