Information from the National Honey Board:

There are more than 300 unique types of honey. Each type of honey originates from a different type of flower or plant. Honey color ranges from almost clear, like water, to dark brown, like mollassas. Generally, lighter honey has a milder taste than darker honey.

Some common examples of honey types are: alfalfa, avocado, Clover, sage, tupelo, and wildflower.

Honey is divided into four general categories:

  • Comb Honey - Stored naturally in a hive by bees.
  • Liquid Honey - Extracted from comb honey by centrifugal force (spin really fast).
  • Creamed Honey - Blending of one part finely granulated honey with nine parts liquid honey.
  • Chunk Honey - Beeswax comb in a jar with liquid honey poured over it.
