The most used icing in the American stores is the professional cake decorators icing.
The link in my resources has the full recipe as well as a video I created to show exactly how the make the pro icing. This is a recipe that I broke down from an industrial formula used in large manufacturing facilities for bakeries. I have used it for over 20 years.
There is no butter in this recipe. The fat base is shortening. High ratio shortening is the best for this as it holds up wonderfully and allows stability. High Ratio Shortening is the preferred shortening over Crisco but you can totally use the Crisco and have really good results. The reason most home based cake decorators use Crisco is because the High Ratio shortening is not available in regular stores. High ratio is only offered through food service and distribution companies that sell to bakeries and larger manufacturing facilities.

That depends on the type of cake you're making. If it's a layer cake, then usually some type of buttercream icing works best. This type of icing can be made in different flavors (butter, chocolate, strawberry, cream cheese, etc.) and spreads beautifully. It's also a preferred icing for wedding cakes, and for decorating.
If you are making a bundt cake or pound cake, then a glaze would be best. A lemon, vanilla, chocolate, or other flavor glaze would work well. You can make a simple sugar glaze then add a teaspoon or two of any type flavoring you like.
For carrot cakes and red velvet cakes, I would recommend a basic cream cheese icing. For coconut cake, a seven minute icing (sometimes called a "boiled icing")works best.
Never use a royal icing to ice a cake - it becomes very hard when set andis only usedfor making cake decorations.
