The actual non-linear editing software is unknown, but one would assume it is either an Avid product, Premiere or Final Cut. There are unlikely chances that it was done with Sony Vegas, but still chances. The main three have some serious credits to their name. Final cut has companies like 20th Century Fox/Fox Atomic behind it with films like Benjamin Button. Adobe Premiere has films like Avatar and companies like Hearst Television and Turner Broadcasting. Avid is easily the biggest with Spiderman 3 and Quantum of Solace.
The complex renderings (such as Dobby) were done with several applications, including Autodesk Maya, and tools by Industrial Lights and Magic, a Lucasfilm corporation.
In disc 2 of the Half-Blood Prince DVD, there is a tour with Dan, watching the editing of the film. In that video, the editing software looks like Avid Xpress Pro, but it could be Adobe Premiere Pro, too.

If you're talking about in Harry Potter and the Deathly Hallows Part Two movie, then it is possible that there will be an extended scene in the deleted scenes on the DVD, because they definitely shot scenes with Bertie Gilbert (Scorpius Malfoy) but didn't edit them in, and they even cast Luke Newberry (Teddy Lupin), who didn't appear in the Epilogue scene either. If you're talking about in the Harry Potter and the Deathly Hallow book... then probably not :( The only extra information we may possibly get from that chapter will be from Pottermore in a while, which then will only be a few paragraphs at most.
