Quick bread is best if it's mixed very little because quick bread is, by definition, risen by baking powder. Baking powder does not work very well if it is overmixed, which is why when you are making quickbread (which includes pancakes, muffins, banana breads, etc.) you always mix all the dry ingredients, and all of the wet ingredients in separate bowls, then mix the two very quickly.
If there are lumps and streaks of flour, it's fine. it will be okay. You do not want big pockets of dry flour, of course, but a few quick stirs to make a rough batter is sufficient.
Next time you make muffins, try over mixing the last of the batter and make one or two more muffins. YOu will see it rises unevenly, high in the middle with a cone top,and has a lot of "tunnels" through the inside, rather than nice even spongey texture.
Quick breads are not kneaded because they are made with a thick batter, not a bread dough. If quick bread is over-mixed, it will work up too much gluten in the flour and the bread will be tough, without a tender crumb.
