A chardonnay would go nicely with foie gras. It's a bit sweeter and has a rich buttery kind of taste to it. However, a French unoaked Chardonnay, for example a white Burgundy, would be too dry and minerally. The ultimate pairing for foie gras is a good Sauternes, which is sweet, but has a unique flavour due to the "noble rot" on the grapes. Make sure it's chilled!

Chicken Calvados is a gloriously simple dish involving chicken (of course), apples and Calvados, a dry apple brandy made in Normandy, also known as applejack. These are strong flavours and while almost any wine could accompany the dish, I'd recommend a full-bodied and not too dry white. A riesling could work, but something even sweeter could be good. Describe the dish and ask the staff at your local liquor store; they generally know their business. Although a dry brandy forms the base of the sauce, the other ingredients sweeten the dish, so a very dry wine wouldn't necessarily be a good idea, and neither would a red, which generally goes well with chicken but not, I think, in this case.

For this dish, a red wine would be the best. Basically, darker meats (lamb, liver, beef) equals darker wine, whereas lighter meats (chicken) equals lighter wine.

I'd personally recommend a burgundy wine or a Pinot Noir type wine. Failing that, any good red Italian wine will suffice. You can visit a proper wine store (as opposed to a supermarket or corner shop), tell them what your meal is and they may recommend a good wine to match the taste.

The classic wine pairing with foie gras is a sauternes. When pairing wine with food one fail safe rule is to pair weight with weight. Foie gras is weighty and rich so is a sauterne.
