Santa Claus, or Saint Nicholas first donned a red robe during Victorian times. He wore a variety of different colors such as green, blue, red, and brown, but in the end, the red was his favorite.
"in 1863, Thomas Nast, a German immigrant, gave us a visual image of the cheerful giver that was to later become widely accepted. When Nast was asked to illustrate Moore's charming verse for a book of children's poems, he gave us a softer, kinder Santa who was still old but appeared less stern than the ecclesiastical St. Nicholas. He dressed his elfin figure in red and endowed him with human characteristics. Most important of all, Nast gave Santa a home at the North Pole. For twenty-three years, his annual drawings in Harpers Weekly magazine allowed Americans to peek into the magical world of Santa Claus and set the stage for the shaping of today's merry gentleman."
His suit became red because Coca-Cola advertised him wearing their colours. He si now the modern Santa, but before that he always wore green, it's just that Coca-Cola have been around for an extremely long time (something like, almost a hundred years, I was told!)
Sometime in the 1930's they changed his image and he's always been like that since. :D
Santa Claus is a myth that began in the Scandinavian countries many centuries ago. There are many different ideas about why the color scheme of red and white was chosen, but it could have been associated with the mushroom called amanita muscaria. It is red with small round white patches. Reindeer have been reported to eat the mushroom and become agitated where some people may have called it "prancing."
There is a more prevalent answer, though still not proven, that the red and white colors came from a Coca Cola campaign in 1931. Though there is evidence that there were red-and-white Santa's before then, still, that myth also persists.
