"The Trinity," is a Cajun vegetable combination using a combination of chopped (green) bell peppers, celery, and onion. It is commonly used to flavor soups, gumbo, jambalaya, sauce piqaunts, pot roasts etc. The ratio of the trinity is equal amounts of onions and celery, and half the amount of bell pepper... all chopped. For instance; 2 cups onion, 2 cups celery, 1 cup bell pepper. Its French counterpart, known as mirepoix, is equal parts carrots, celery, and onions.
