At the completion of the glycolic process, pyruvic acid is produced. Some of the pyruvic acid ends up in the cell mitochondria where cellular respiration takes place. In the absence of oxygen, the pyruvic acid goes through a process of fermentation, which takes place in the cytoplasm of the cell.

In cellular respiratio, oxygen is the terminal electron acceptor. In fermentation, the terminal electron acceptor is an organic molecule.

If oxygen is available, cellular reapiration is preferred. In the absence of oxygen however, certain organisms have evolved to switch over to fermentation to derive energy
