When water leaves the surfaces of plants to enter the atmosphere what is the best and most specific term that is applied to describe this process?

The term used is transpiration when water travels from the roots up to the leaves and moves into the atmosphere. Another, but not as useful, term is evaporation for when water leaves the surface of the leaves.
