The real answer is that you can't easily tell unless the person is working hard to identify with the gay/lesbian community and is wearing signature clothes and deliberately behaving in such a way as to broadcast to the world that he/she is gay/lesbian. Such behaviour is common enough in gay/lesbian neighbourhoods and major cities, but in conservative places gay/lesbian people can be quite invisible.
