I do know a recipe for Hamburgers using ground beef, it's mostly about mixing in the right spices. My mother and my self also often make lazangia with ground beef in the our sicilian family sauce.

Favorite dishes of mine that include it and are quite easy to make, are Sloppy Joes, Shepherd's Pie and Spaghetti Sauce. While I often make these items off the top of my head, the Betty Crocker Cookbook is my go-to reference for these types of recipes.
